For many of us, this dried sweet corn is a more flavorful, intensely sweet product than its frozen and canned relatives. While canned and frozen corn lose their authentic richness as a result of the preservation process, Cope's Dried Sweet Corn seems to have its corn flavor concentrated and intensified by the air-drying process. John Cope's Dried Corn makes a flavorful and hearty corn chowder. I had not made it in years, so bought enough to last until spring. It was delicious, especially during the prolonged bitter cold weather we had this year in PA.
