My husband's family is originally from Pennsylvania. He has enjoyed Cope's corn for years! I only recently tried it...and I love the rich nutty flavor. We recently served it to neighbors at Thanksgiving. They had never heard of Cope's corn...but they LOVED it too! I'm picking up a few extra packages to add to their Christmas packages!!

I've been using Copes dried corn for years in the Supreme corn recipe on the package. My mother made it for every Thanksgiving and Christmas dinner and now I follow suit making it for special dinner parties as well. I like the recipe but caution that it comes out pretty sweet so I use half the sugar asked for. Still the smoky flavor of the corn gives this dish a special flavor that can't be duplicated with regular corn.

Dried corn in milk and cream was a staple at Thanksgiving. It was the previous two generations that prepared it for us. I am so happy it made it's way into Mormon country in our rural county all those years ago. I am reintroducing it to my Thanksgiving tamale and is cooking as I write this. I think this is going to be a hit! My sneak taste confirms it.
