Finally, Copes corn the right way! It's been a family favorite and we can't find it in stores anymore. So when we found it here, we bought a case! It was delicious! Just like it used to be!
Cope's Recipe

I last ordered a case of Cope's dried sweet corn several years ago and eventually ran out so I ordered a new one. I notice the kernels are much larger now than in the old days and the recipe for the creamed corn is quite different. I soaked mine in boiling water over night and simmered it for over an hour the next morning with the sugar, salt and butter before the kernels became tender, then I added half and half and simmered it a few more minutes. The taste was wonderful as usual, but I really wonder if the new recipe with its very short cooking time would really allow the kernels to be chewed easily.
I must say that the shipping service from the PA General Store was outstanding. Good work people!
Dried Corn!

This is some of the best dried corn we have ever had including what we have already dried ourselves. It has a unique flavor that not everyone enjoys. But the ones who do enjoy it; it's like going back home for home-coming !

I grew up in PA, and eating baked corn was a staple dish at all Thanksgiving and Christmas dinners. I was so sad not being able to find it in stores, and especially in the South where they have never heard of it. The PA General Store carries some of my childhood favorites that I am thrilled to find and have available to ship to my door.

In these strange 2020 days, I wanted to recreate a childhood favorite casserole for a PA friend now in California. He said his mother swears by using only Cope's toasted dried corn in her corn pudding. PA General Store not only stocks this hard-to-find product, they offer different combo packages, at a price (as of Oct 2020) that is less than others on amazon.com Thank you for giving me the chance to nourish a friend who will be far away from PA this Thanksgiving!
