12/3.75 oz Cope's Dried Sweet Corn-One Case

It is close to impossible to get Cope's Corn here in Texas without having to pay outrageous prices, especially when ordered through Amazon. But by going through Pennsylvania General Store I was able to get a dozen packages at a great rate and speedily shipped to my home. My wife is Comanche and this was one of her favorite foods to eat. At least monthly, I make a big batch of Cope's Corn with Buffalo/Bison meat and minimal spices. Great thanks to PGS for keeping Cope's Corn available and their fast shipping.

Born and raised in Pennsylvania yet moving around as an army brat you miss certain things from PA. We used to find Copes corn in Washington state, but no more. I knew when I found it online my folks would greatly be surprised and appreciative my Christmas gift and they totally were. I received a call expressing just how grateful they were. Thanks for the quick shipping and providing my folks some delicious memories!

In 1920, newlywed grandparents moved from Bloomsburg to MT. In November they received shipment of homes dried sweet corn from the sisters. Every year they received this. I was born in '48. By that time the family's dinner had to have Cope's. The sisters always came through. But some lengths were gone through to get corn to those of us who were now living away. I lived in Germany with the service. My grandma sent corn for our table and we introduced it to our friends. One year my sister was living in Idaho. She had ordered but it would not arrive until Friday after Thanksgiving. Gram and I packed 2 boxes and went to Greyhound. Yes they'd ship it but not until Friday. "How much is a bus ticket?", Gram asked. We bought a seat on the Westbound bus leaving Wednesday. My sister picked it up five hours later! Success. We have never been without our sweet corn. Living in Fort Knox, KY, we were ready to deploy overseas. I had my corn, but no place to cook it. Our son and daughter have taken up the tradition. I send it to them. Our son is pretty good at making it to the family standard. My niece in Tennessee is also never without it at her table. One day, when mail men came to the door, ours noted the return address and the familiar sound inside. He smiled as he handed me the box. He was from Millville,PA!. At the age of 75, my husband and I enjoy our corn and if we have guests, its flavor tells everyone the story. I will enjoy it this year but I am down to one packet. Ordering a case to give out for Christmas. We love the Pennsylvania General Store.

Finally, Copes corn the right way! It's been a family favorite and we can't find it in stores anymore. So when we found it here, we bought a case! It was delicious! Just like it used to be!

I last ordered a case of Cope's dried sweet corn several years ago and eventually ran out so I ordered a new one. I notice the kernels are much larger now than in the old days and the recipe for the creamed corn is quite different. I soaked mine in boiling water over night and simmered it for over an hour the next morning with the sugar, salt and butter before the kernels became tender, then I added half and half and simmered it a few more minutes. The taste was wonderful as usual, but I really wonder if the new recipe with its very short cooking time would really allow the kernels to be chewed easily. I must say that the shipping service from the PA General Store was outstanding. Good work people!

This is some of the best dried corn we have ever had including what we have already dried ourselves. It has a unique flavor that not everyone enjoys. But the ones who do enjoy it; it's like going back home for home-coming !

I grew up in PA, and eating baked corn was a staple dish at all Thanksgiving and Christmas dinners. I was so sad not being able to find it in stores, and especially in the South where they have never heard of it. The PA General Store carries some of my childhood favorites that I am thrilled to find and have available to ship to my door.

In these strange 2020 days, I wanted to recreate a childhood favorite casserole for a PA friend now in California. He said his mother swears by using only Cope's toasted dried corn in her corn pudding.
